Pallarès Solsona Kitchen Knives, imperfect
Sale price
$30.00
Regular price $22.00Size
These knives have a small imperfection in the blade and/or handle. The tips are not honed to a perfect point. FINAL SALE.
These carbon steel and boxwood kitchen knives are made by hand in a workshop in Solsona, Spain, near Barcelona, where the Pallarès family has been making knives and blades since 1917.
The carbon steel blade is lightweight, and will hold it’s edge longer than a typical stainless-steel blade. It will develop a lovely patina with use.
Available in Four Sizes:
Paring Knife: 3.5” blade
Small Kitchen Knife: 4” blade
Medium Kitchen Knife: 4.75” blade
Kitchen Knife: 6” blade
This is a carbon steel knife.
Benefits of carbon steel:
For most chefs, the principle motivation for using carbon over stainless is simple: the carbon edges start sharper to begin with, and, if well maintained, they stay sharp longer. That's not to say stainless steel knives are inherently dull—it just means the carbon steel stuff is really sharp!
So, what's the trade-off?
Carbon steel blades are not rust-proof or “stain-less”. They will quickly lose their initial silver coloring and will darken and develop a distinctive patina over time.
Tips for maintaining carbon steel blades
- Do not soak carbon steel or leave your knives in the sink.
- When you're finished cutting: wipe the blade clean.
- Do not leave it wet, and do not leave food on the blade.
- Be careful leaving your carbon steel knife around the sink, as a single drop of water can produce corrosion on the blade.
- Crucially: Never put a carbon steel knife in the dishwasher!
